With the onset of spring, it seems like everybody is ready to host weekend afternoon and BBQ parties. If you are planning to have one at your residence soon, then why not sweeten the menu a bit with some awesome and delicious spring cupcakes? Last week, I came across a wonderful recipe, the results of which are suitable for any formal or casual gathering. I would even dare to say that these confections are a worthy substitute for any regular Sunday dessert.
Now without torturing your taste buds any further, I am going to disclose the recipe right here:
1. ¾ cup of flour
2. ½ tsp of baking powder
3. 2 large eggs
4. ½ tsp of salt
5. 1 tsp of vanilla extract
6. 2 tbsp of flour
7. 10½ tbsp of unsalted butter
8. 1⅓ cup of sugar
9. 100 grams of unsweetened chocolate
11. Lavender icing
First, preheat the oven to a temperature of 177 degrees Celsius and then line a couple of 12-cup muffin tins using paper liners. After that, whisk the baking powder, salt and flour in a bowl and keep it aside.
Next, put the unsweetened chocolate & butter inside a heatproof bowl. Set the bowl over the simmering water and stir the mixture until it becomes smooth. Then remove it from the the heat and allow the concoction to cool down.
Pour sugar into the mixture of butter & chocolate and beat it for about 3 minutes using an electric mixer. Once done, add the eggs one by one and continue beating until they have combined thoroughly. Now pour in the vanilla extract and beat slowly. Finally, add the other mixture you prepared earlier into the bowl and mix the batter.
Distribute the batter evenly among the muffin cups and bake them for about 18 minutes. Use a cake tester to see if the cupcakes are ready to be taken out from the oven. Allow them to cool on wire racks.
Cover the top of the cupcakes entirely with Lavender icing and let it set for at least an hour. Finally, decorate them using the sugared flowers. Your cupcakes are ready to be eaten. If you want, you can even store them in single layers inside airtight containers for a couple of days, but not more than that.
